Classic Pancake Recipe

Classic Pancake Recipe

Light and fluffy, perfect with your favourite topping.  One of the easiest recipes and a favourite for the family.

Ingredients

1 cup self raising flour

1 cup full cream milk (can be low fat if needed)

1 large egg

1 table spoon lemon juice

1 pinch of salt

1 pinch of sugar

Butter to grease pan

 

Method

Mix in all the ingredients and whisk till almost smooth.  Don’t over-mix as the pancakes will not become as fluffy.

Heat the pan on a medium heat and grease with some butter.  Add around half a cup of mixture into the pan and even out the mixture to form around 12cm in diameter.   You can cook more than one pancake at a time if there is enough space in the pan.

You will need to flip the pancake once cooked on the one side.  You will know when they are ready to flip as bubbles burst on the top surface (around 1-2 minutes).  Once flipped, allow to cook on the other side for another 1-2 minutes or until lightly golden brown.

Serve when hot or cover with a tea towel to keep warm.

Enjoy with your favourite toppings, including butter, jam, marmalade, golden syrup or honey.
